Ah, the aroma of cod drying is in the air.



Lots of cod-drying racks in the Lofotens. I've never had dried cod. Trygg says it's sort of like fish jerky. The cod were not drying much in today's all-day rain.  Apparently a lot of it is shipped to Italy. Trygg discouraged me from including close-ups of the individual cod in its various stages of drying, from fresh to bone-dry.  The Lofoten Islands is the only place I've been where I've met a front-end loader on the road with its bucket completely full of cod heads. I'm not sure what they do with those, but there are many racks with only cod heads drying on them. I'm trying to decide whether I should try the Lofoten delicacy cod tongue.
